Lets see what I can find around my house

Tonight I'm making saag paneer as I had a bunch of spinach that needed to be used and some fried paneer that had been in my freezer forever.

Anyway, heated up some coconut oil (strange, I know) and fried some cumin seeds and mustard seeds until they popped. Maybe about a tsp of both?

Added a chopped up onion and two chopped cloves of garlic. Sauteed them.

Added two dried and chopped red chillis, 5 or 6 whole cloves, 3 or  4 cinnamon sticks, and 4 cardomen pods, ground cumin, ground corriander, pepper, chili powder, tumeric and fenugreek. Let it simmer for about 5 minutes.

Added the spinach, a chopped tomato, and the fried paneer.

Let it simmer for about 30 min add on to of basmati rice and voila, food!

Should have made naan though.
